I soak all my fish (walleye, perch and bluegill) in buttermilk, still wouldn't poke a stick at crappie. I catch crappie in 35* water that I won't eat. Doesn't bother me much as most people enjoy any panfish so they are very easy to give away, specially to landowners.

Depends on the method of cooking, but not much beats coldwater Bluegill, followed very closely by coldwater Walleye.
