Are white perch worth eating?
 
We always catch huge (well, huge to me) white perch when we go to the river to catfish, but we always throw them back. Are they worth keeping?

We used to catch a bunch of them bass fishing up in Maine and keep about 15-20 a morning. Some of ours weren't so big... but when we made it back we'd fillet'em out (which on a small, alive white perch is a very very hard thing to do).

Then we'd bread'em in a bit of cornmeal and cracker crumbs and cook them in a hot skillet with bacon greese, just like bacon. If you weren't in the kitchen when they hit the papertowel covered plate.... you didn't get any. They were flat out delicious.

Fantastic......There is only one place you can get em round here and there is a lot of people that fish for em. Keep them suckers, you dont know what you are missin.

They are well worth keeping. though if you are not used to filleting very many fish it can be a bit difficult for you. They are great eating no matter how you cook them. I like them battered and deep fried the best, they are great in a fish chowder too. I can't say as I ever had them cooked in a way I didn't like them.

I have fished for them in Maine....They are excellent...Many of the locals in Maine THROW BACK yellow perch and just keep the whites...

AS other posters have said, they are great filleted and fried, although I don't turn up my nose at the yellows, either..

I ice fish for yellow perch almost every day and often catch white perch. They are like a yellow perch on steroids. They are huge and fight like a bass especially on lite ice tackle. I like the 10" or smaller to fillet and fry up. I have fish frys all summer and those sized whites are what I go after. They are great. The ones I catch in the winter are often over 2 pounds and I don't usually eat them I sell them.
