Pickled Northern Pike?
I was wondering if any of you guys had a good recipe for pickling pike. ive had it a few times from pretty much random people and i never got a recipe but i really liked it. it was made with onions in it to i think. I would appreciate it if any of you could help me out.

My wife made some pickled bluegills once..they were good but gave me the willies since I knew they were bluegills.;)

Recipe for 1 good sized northern (multiply for more):
Cut up fillets Soak fish for 24 hours in salt water (strong enough to float a raw egg) Drain, do not rinse Cover fish with White vinegar for 24 hours Make brine: Boil for 3 minutes and cool: 2 cups white vinegar 3/4 cup White sugar 1 cup water 1 Tablespoon pickling spice Then add 3/4 cup white port wine. Layer fish in large glass jar (Mason or Ball)with onions(vidalia)/fish/onions/fish till jar near full. Put lid on Store in fridge minimum 10 days before eating. Don't even need to worry about bones. Enjoy |

I had some this year for the first time, man was it good. I think the key to the whole thing was the onion....

I'll definitely try it this year... Have you tried it with other fish..??.. I expect it would work well with pickerel... How about lake trout..??.... |
