Orange-Flavored Roasted Squirrels

From:
Hunting and Fishing Club, Fermont, Quebec, Canada
















[*]2 large squirrels[*]2 wide pork fat slices[*]1 unpeeled carrot, sliced[*]2 green onions, grossly chopped[*]1 bay leaf[*]Fine herbs, to taste[*]Chives, to taste[*]1 cup [250 mL] white wine[*]Juice of 3 oranges[*]Vodka or Gin, to flambee [optional][*]1 orange, peeled and broken-up into segments [/ul]


[*]Well wrap squirrels into pork fat slices; transfer into a roasting pan.[*]Add carrot slices, chopped green onions, bay leaf, fine herbs and chives; pour in white wine.[*]Roast into a preheated 350°F [180°C] oven, for 1 1/2 hours.[*]Half an hour after the end of cooking time, pour in orange juice.[*]Just before serving, strain sauce.[*]If desired, flambee with vodka or gin. [/ul]

Hey Reb, have you tried this recipie yet? Do you cook them alive? Does the smell go away? Do they curse in the oven? Ever cook em over an open fire?

Arkie Squirrel cookin: Put yer squ pieces in a crock pot, add equal amts of coke and catsup, let go on low 4 hrs, carefully fetch pieces out of juice, let cool some, pick meat off bones return to pot, season juice to taste, [becomes BBQ sauce].Leave lid off to thicken up sauce. Eat on buns. Weally works well with wabbit.

Ok Guys, no one is saying anything about the smell that can and does kill a deer. Do you really think the taste of squirrel makes up for the smell? I think someone should start a poll!:D

Don, have you ever eaten at a Chinese mom and pops restaurant?:DMan, you probably have eaten Squirrel and Cat and did'nt even know it!:)
Actually a squirrel is cleaner that a chicken! They don't eat rotten things, they don't eat cockroaches, they don't eat worms and they sure taste good Southern Fried!:)
Smell? What smell? Man, you have to fry them up the same day. Did you leave them on the porch for three days before you brought them to the kitchen?:D:D:D:D:D:D
