Anyone know how to eliminate

I wonder what they'd taste like, maybe soaking them in some lemon Juice? Might have to try it sometime...
One Pond I go to I catch some good eating <tasting> 11-12 inch one's. But other Ponds, I've caught 3-7 pound one's... that are a bit musty! I caught 15 Bass the other day, and just froze them... for a special occasion.<img src=icon_smile_big.gif border=0 align=middle> |

the muddy taste has more to do with water quality than anything else,in another words you cannot spend a few minutes trying ot remove the muddy taste when it has been in the water for several months. 2 tips to try, soak in milk. also try cutting your fish in steaks like a porkchop instead of fillets.

i;m with dan on the water quality. but if you got some no need to waste it. try a brine or a marinate if that don;t work burn it all you;ll taste is burnt fish with no muddy nuances

Thanks for the info all... I fryed the ret of the big Channel Catfish the other night, in an iron skillet... on a camp fire. I did'nt notice the musty taste as much, as when I fryed it indoors.

FYI...the "muddy taste" doesn't really come from the mud. The fish, and the mud too, get the smell from blue-green algae in the water. When the population blue-greens get too dense, the fish and mud, take on the characteristic odor. You may just have to deal with it, or clean out the fish. Commercial operations often delay the harvesting date until the fish have "cleaned themselves out". An easier method, but oftentimes inconvienient, is to chage your fishing dates. Avoing fishing for a few days to a week after hot still weather or when the ponds plankton bloom is thickest, will reduce the muddy taste in your catch.

I've since cauht a 23" 6 lb Bass on July 5th (still had eggs). It's from a diffrent Pond with a rocky bottom. |

heres a sure fire way to get that nasty taste out. what i do is to take a small tube and insert it into the fish's mouth, then i slowly force it down its throat until its about 2 inches in. then you'll want to funnel a mixture of milk and olive oil through the tube. remove the tube and hang the fish by its mouth from a hook or something and let it stand overnight. in the morning gently squeeze the mixture out and fry up your fish. you can use the mixture as a sauce if you want.

Do you leave the skin on?
I have found that skinning every fish removes most tastes that people find unpleasant. I usually don't marinate by choise but do keep all my fish alive as long as possible and skin them when I clean them or as soon as possible afterword. Give it a try and let me know what you think. Here is one to try, get one of those cheap kids pools and fill it with clean water, then feed the cats corn for about a week, that should clean out that taste.(I have never tried this.

For eating catfish you just can't beat one about 12 inches. They taste great everytime. Man I need to go fishing, you guys are making me hungry.

Bud in addition to that, I also trimmed a slight amount of that dark red meat you'll see on the bigger cat... running down the middle of the Fillet. Turned out great. I still have 3-4 packages left to eat... and lots of bass and perch... and deer.<img src=icon_smile_cool.gif border=0 align=middle> |

This may not be feasable but I know a couple of regulars that throw there fish in a stock tank for a week or two.

I've always thought catfish should have a bit of that taste to it. Part of the appeal. I'll chime in with the same answer as some of the others. Milk; or even better, buttermilk before dredging in flour and cornmeal should help with the flavor. Butermilk also contains acids which will tenderize the flesh and make it more flaky. (Works on venison and small game too)

Like a few people on here, I think the size of the fish has a lot to do with the taste. I usually will release the larger flatheads I catch and keep the 12-18" ones for eating purposes and they taste great.

Water quality s definitely the culprit, so if you can get fish from waters not suffering algae and silt problems, then do it.
Things I do with wild catfish: 1. ALWAYS skin the fish. 2. ALWAYS remove the lateral "vein" (lateral line). You can find it on the lateral line of the fish, running down the center of each of the fish's side. Just make a small cut at the top of a fillet along the lateral line, peel back the flesh a it, and you should see the vein. Gently take it between thumb and forefinger and slowly tug it out. The whole thing should slide out. 3. Soak the fish overnight in raw minced garlic, salt, a splash of vinegar and milk. This will not completely remove the ogre taste, but it helps considerably. ---- For fish whose ogre taste is stubborn, I chop up the meat and throw it into a catfish gumbo, with corn, 'maters, okra, bacon, and a lot of other stuff. Mercy, is that good. |
