summer sausage
 
Anyone have a receipe for deer summer sausage? It is the same thing as Hickory Farms Beef stick, except made with venison, I think. I know that the processing plants are able to make it, but they all say they do it in 100 to 2000 lb sessions. I don't think I can handle that much. Please email me anything you may have. we do make alot of sausage around here but not summer. our local butcher will make the summer sauge for us in 20 lbs minimums. i can believe they want 100 lbs from you . try to find a smaller shop that needs the buisiness

If you want to try to make it yourself try these two sites. They not only have the recipes for venison summer suasage on their site they both have kits that have everything you will need. Eldon's site has the way to make it using a smoker and in your oven. I've tried both of these recipes and liked them both. They both have very good books and video's on sausage making too.

I have jalapeno and cheddar venison summer sausage made every year by a processor that does a really good job. I only have to have 10 lbs. done. That lasts me most of the year. I definitely couldn't handle 100 lbs.
