Mix Ratio
Hey guys when making venison sausage or burger what's your ratio with either pork or beef and which do you perfer? Pork or Beef?

I like about 20% fat. Pork for the Sausage, And Pork fat for the burgers I will eat first, Beef fat for the ones frozen for latter in the season, and pork and beef mixed for the chopped meat I intend to use for meatballs and meatloaf. I don't add any fat to the meat intended for chilie or tacos.

For every 4 lbs of venison I put in 1 lbs pork
