Muskrat, nutria, groundhog, possum, racoon, beaver(the kind that lives on the water)...
I have been a professional chef for over 27 years and can make almost anything taste good, but these animals are just outside what I consider a good starting point for a meal.
If I got really desperate, I may try the groundhog, only because they have a decent diet being vegetarians. Their meat most probably won't taste like marsh mud.
I don't know how you could eat that meat. But when I watch "Fear Factor", I couldn't eat a lot of what those folks put into their mouth either. To me, muskrat would fall into this catagory.[:'(]

Groundhog aint bad if you trim alot of the fat off of it. Same with coon.

[:o] Ohhh, I do not even want to imagine it[:'(]. I think I would rather eat a dozen hamsters, but skinning those little things would drive me nuts:D
