Deer sausage grinding

Default Deer sausage grinding

I typically take all our deer meat and grind into sausage but we are unable to eat all of it before it begins to lose its freshness. Has anyone frozen the meat whole then pulled out of freezer thawed in refrigerator then ground into sausage and then refrozen? Is this a safe practice? Once the sausage has been ground how long will it remain fresh vacuum sealed and in freezer?

Are you talking sausage with the spices added or just ground meat? With pork added and ground I like to use within 6 months. But a good vacuum packer makes it last a bit longer.

Yes, I freeze meat right away, ground and raw. Later on I unfreeze and make summer sausage, sausage and snack sticks and re-freeze again. Only sausage is refrozen uncooked.

I do too. I save up my grind meat until I have enough to pull the grinder out then I do it
