If I'm doing backstrap, I'll leave it in about a 6 inch chunk. A light coat of olive oil, season with a bit of steak spice. Grill to a medium and let sit for a couple of minutes before slicing into 1 inch thick steaks for serving.
I really like steak done in a cast iron pan. Get your pan nice and hot. Drop in some butter with a dab of bacon grease and as soon as it is done bubbling lay in your seasoned steak. I like just plain black pepper on mine. Once done on one side (not long) flip and add some onions. Again your looking for a medium steak. Serve with a nice baked potatoe. Simple and tasty!!!

if its from an older deer or youre worried about it being tough, pressure cook it first then sear it in a pan. If not then id sear it in a skillet on the stove top to get a nice char and finish it off in the oven to seal in the juices. I dont like to use a lot of marinades etc b/c i want to taste the venison

Saute mushrooms and onions...Fry venison steak as you would beef. No marinades, no poo..
Always salt and season after frying is done, otherwise it will dry out.
