Tried beaver over the week end
 
Had a cooking at the farm and decided to try a beaver that was in the freezer.
Not knowing what to expect I wraped in foil with some bacon on top and put in oven at 200 temp for 6 hrs.
Pleasant surprise to all who tried it. We feed about 40 people doves and deer.
Next time I will fix with veges. and it should be hard to tell from beef stew.

yeah, just dont ever tell em what it is...i smoked up an awesome raccoon, everyone eatin the shyt outta it and as soon as i told em what it was...3/4 way through the meal sum1 asked...noone wanted anymore..who woulda thunk it?

Go for a young beaver, and clean all the fat off as well as making sure you have removed all the scent glands.

my first beaver was a 18 year old from Long island......
California beaver is nice........sometimes has a hint of suntan lotion.

leave the fat on while ya cook.
