Camp potatoes
 
Here a good one for yall

As many new potaoes as yall can eat
Quartered and put in a cooking tin
Clove of crushed or minced garlic
One stick of butter sliced on top
1-2 cans of Rotel tomatoes mild or spicy
Little bit of your favorite seasoning
cover and cook on pit till soft
slice up 1/2 block of Velveeta and melt on top
Once cheese has melted - stir and enjoy

Its damn good. And easy

That sounds great, Tex! Anything with taters and melted cheese can' t be all bad! LOL

We do something similar. We slice up the New Potatoes, butter up the heavy foil, add sliced onions and whatever spices you like, fold and seal the foil pack then either place on the grill or bury in the coals.
It works great and takes little time to prepare. The leftovers if any can be used with the eggs in the morning just by frying them up to a nice brown.

Tex,
I tried your recipe last night at my lease in Hamilton County (little North of you), and they were a huge hit. I also put some ham in with them. Good Stuff!
