This was My 1st attempt but i will be trying alot of recipes in the furure. I already have a couple recipes i cant wait to try.
I have 1 for venison Pepperoni and 1 for Salami that i am itching to try.

We have a Hobart supply store near by, they sell to the big processer and the little guy. They have seasoning for the small guy allready package to make 25# for like $4.50 to $5.00 a pack. 3# casings for summer sauage for $.49. I used to buy the kits and found this to be alot cheaper. They also carry a line of equipment for doing your meat processing. Zeak

DW that smoker is Sweet! Very impressive work!
Bet it works as good as any store bought unit for $300.

yeah, it works pretty great. it also gave me and my son a project to do together.

I just made another 48lbs of venison summer sausage. I gave most of the 1st batch away to friends and neighbors. i gave away a few sticks this time but i am freezing the rest to pull out in the summer time with some cheese and crackers.

nice job. I made a couple 4#ish summer sausages on my New Braunfels and they came out great, your smoker looks great though!
