Deer Burger Question

Quick Question Hunters,
What do you folks add to your deer burger when grinding it with hamburger ..salt , pepper ?? etc. or do you add that later when you are cooking with it.
My buck I got is very tough so I'm going to burger it.

well we go a lil crazy....we make some just plain burger...and we season some fer certain things. i.g sausage, chili and meatballs...as with the steaks..some get italian dressing...some lemon pepper, terioki on some..jack danials season is a good one too..then we write on the bag what it is...
jerky is good fer tough meat as well..slice it super thin is the best imo
if ya aint sure what ya wanna do, i would wrap in in as many pounds as your family usually uses for say, hamburger meat for dinner..
leave it plain, and ya can season it when ya figured it out.

We make bacon burger... Get a 3lb or 5lb package of bacon ends and pieces and send it through the grinder with 10-15lbs of meat. We roll em into small meatballs and fill em with sour cream and cheddar cheese... Big hit at Christmas parties!

We like our burger just as it is, and think (like venison steaks) it is best served medium rare. We season it just liike our favorite hamburger. It tends to be a bit more crumbly because of the lack of fat, but that just makes it gooder!

If you mix it with beef fat, you can eat the deer at 140 degree's, where it taste the best at. deer should look rare at best when its done..cooking deer to the color brown is only good if:
A: you got this meat from someone you do not know.
B: you got this meat from someone and you do not trust their meat handling skills.

I've always heard that it won't last as long in the freezer if it has pork or beef fat in it. I grind mine plain and then season it as I cook it. Most of the time I make jerky with the ground meat or chillie. I don't eat a lot of just plain ole deer burgers.
