Chops?
 
this might be a stupid question. I had a deer butchered and instead of getting my whole backstrap returned to me i just got chops wraped up like steaks. I'm assuming these are just my backstraps cut up? If not what recipes you guys got for them?

I treat them just like a Fillet Mignon. Lightly season them if you like and cook them nice and rare on a hot grill. Or you can pan sear them if grilling is not an option. I use a cast iron skillet, salt and pepper to taste and a little garlic butter and/or bacon grease..

Yes, the chops come from your backstrap. Chops were always my favorite until our butcher went out of business and my dad and I started butchering our own, now we just keep the straps whole.

My favorite way to prepare chops is to marinate them overnight in Italian dressing (after soaking them overnight in canning salt water), and charcoal grill them with mesquite or hickory chips. I charcoal grill all of my meat unless it's a part of a recipe.

PS, not a stupid question, I've been killing deer for 20 years and didn't know what a backstrap was until I started butchering my own four years ago.
