First, a little bit about me. I am an avid hunter and through the years have acquired quite a reputation as a cook. Therefore, I have been dubiously selected/appointed/designated "da kamp kook" at the hunting camps that I frequent. I belong to two Adirondack Clubs and my brother and I own two parcels of land (with camp buildings), one in the Northern Tier of New York and one in the Southern Tier of NY.

With hunting season open from late September til into December (when you consider all methods, ie, bow, shotgun, rifle) I spend a week or more at Camp #1, a week or longer at Camp #2, several shorter trips to each of the Northern and Southern camps.

Therefore, I have pre-chosen recipes for these trips that will allow me to do the cooking while still having the time to participate in hunting daytime and evening "****tail hour" (Very important). I usually take a day before the hunt (while still at home) and prep for these meals, packing everything needed for a specific meal in one (or more) grocery bags. I am an ardent user of cast iron pans and the wood stove surface for keeping warm and slow cooking.

My menu is as follows, and is repeated every year (in a different order)........

Breakfast -
1. Anna Brunch (basically a scrambled egg casserole)
2. SOS
3. Biscuits w/condiments.

Lunch - (stays on the wood stove all day long)
1. Chicken soup (hearty)
2. Brunswick stew
3. Chili

Supper -
1. Polish Night (gotta have it) Perogis w/kraut & kielbasa,
2. Hungarian stew (much like Hungarian Goulash)
3. Mexican Night of (tequila???) Quesadilla/Enchiladas
4. Italian Night of Spaghetti, Sauce w/Ital Sausage/Meatballs
5. American Night of Chili-Mac (inspired by my military time)
6. American Night of Turkey ala King (again, military inspired)
7. Another Italian Night with Lasagna
8. Rebel Night with Fried Chicken (I cheat, use the oven)
9. Yankee Night of Country Fried Steak (kinda Rebel)
10. American Night with PorkChops w/Mac & Cheese

Desserts -
1. Piggy Pudding
2. Brownies
3. Apple Betty
4. Cherry Cobler
5. Pineapple Upside Down Cake
