Help with deer jerky
 
I tried to make deer jerky last year using some jerky seasoning packets. I thought I had it nailed, the jerky tasted great, but after about a week it started to mold....horrible waste.

I am guessing I cut it too thick and did not dry it enough.

Any tips would be appreciated. How do you store it once it is made? What is the best seasoning/persevative packet?

I store mine in a paper bag loosely closed. It needs to breathe not sweat. Or vac pak and freeze if you make to much. Just defrost in the fridge in the sealed bag.

I like mine a bit chewey not totally dried. Therefore I vacpac it into smaller portions and freeze it. When I want some I thaw a package and eat. It doesn't keep very long around here due to my son. LOL

I guess that is the route I will go this fall if the hunting gods smile on me...make up a bunch of it and put it in week size vac sealed packages and dump it in the freezer.

Mine never last's too long. I put it in a paper bag and toss it in the freezer. I put some in a ziplock sandwich bag and defrost in the fridge when I want some to eat. EVERYDAY!!!:barmy:

totally vac pak . seal them . // or when hunting we keep it in a paper bag , along with the beer

You need to freeze it.. Just treat it like any other beef product in the freezer. Seal it in a plastic container, and freeze.

For keeping at room temp or in the fridge, you need a desiccant like silica gel or something to keep it dry. It won't keep but a couple weeks in dry weather at room temp so its best to put in fridge or just freeze it.

Frozen jerky does not have that " its frozen not fresh" thing because there's almost no water when you freeze it so it stays the same when you thaw it out.

Mold is from the moisture, always store in a paper bag rather than plastic. Freeze extra and leave the stuff that have for eating in the frig. As long as you dry it properly and store it in paper it wont mold.
