Thanks for the tips so far. I canned the rest of our meet from last season, only about ten jars a few weeks ago and it all came out great!! I tried sveral different ideas from on here, thanks again!

Default canning venison

The instructions above are very good. Canning venison, elk, or any deer is absolutely a great way to go. I love it with beef and noodles, stew, and my favorite is after removing from jar coat the chuncks of meet with flour and fry in a pan of butter.

Pull off all the feathers of em,,pinch off the head/ the legs,,put em in a 55 gallon drum,,your done.
