turkey legs
 
I love the white meat, I'm a breast man .
What about the legs? I'm thinking slow cooker with some veggies and chicken broth?
Any suggestions appreciated.

brine them in a solution of 1 cup coarse salt, 1 cup brown sugar, 1 gallon water, 1 Tbs cure#1 in the fridge for 7-10 days






put them in a smoker @ 200F, Smoke for 4-6 hrs





smoke them until an internal of 180 F



enjoy



Package for freezing. Reheat on the BBQ, They are great.

I don't hunt Turkey but I save all my pheasant legs and thighs, when I get a batch I debone and grind for tacos.

Thanks Big Guy, I do own a smoker but its a crappy little tinny thing, but I'll try that.
I ended up browning the legs under the broiler, deboning, then slow cooker with veggies and spices. It made a good soup!
It's illegal to waste game meat up here so I won't just toss them, now I have 2 recipes to enjoy them :)
