Handles nailed it.. The key is to remove every bit of fat you can get off it...Also applies to woodchuck and beaver... Also you should remove the glands (kernels) on the inside of the shoulders and the small of the back inside the body cavity... I've had young coon and enjoyed it...Thought it was similar to rabbit...

Well I tried it. I soaked it overnight in milk and removed all the fat. Removing the fat wasnt as hard as I thought, just run in hot water and it should all peel off. I then boiled for 45 minutes with salt and pepper and then baked in a pan of bbq sauce for an hour and half. It tasted better, but still like crap! LOL Next time I will try the salt water/vinegar solution.

I had it once some 20+ years ago. BBQ'd roasted in a ovenand from I remember it didn't taste that bad just real greasy and stringy meat.

bb-q it. In a big pit put your fire on one side till you get good coals then place coon on the other side to slow cook and smoke for about 1 1/2 hours then take the coon and wrap in foil and put back on pit for another 1 1/2 - 2 hours. should fall apart.

Boil that joker first with a little creole seasoning until it gets real tender. Put in a roasting pan with onions, carrots and a little bit of water and place in the oven and cook for about an 1.5-2hrs. Get a package of that good ole mCcormick gravy mix, add it and let cook for another 30mins. Grab a fork and sit indian style on the floor because the next time you open the open, you will be digging in.
