Jerky??
 
What kinds of meat do you use to make jerky? Beef or venison. Abunch of my recipe say flanks steak but no one in my family has ever heard of it..[X(] What do you guys use?

venison less fat than beef. You can use strips of beef.top round the part used for london broil.or flank steak,Try this for your skirt steak http://www.gourmetsleuth.com/beefcuts.htm (see no.8 under plate)

Flank steak is part of the belly. It’s like the part they make bacon from pork. The fat from the flank steak should be removed to make jerky. Both beef and or venison are good for making jerky. You can use any part of meat as long as you cut the strips length ways following the grain of the meat.

venison works better;because it has less fat. fat will turn and go bad on you,if it last very long.

I use venison and beef. Bottom line is you need to trim off ALL fat and then I make sure it is cook well done. Some people do not like it that dry but then again I dont worry alot about getting sick off jerky gone bad.
