marinate in Allegro hot & spicy for several hours...slice open lengthwise, sprinkle diced onion, diced jalepeno, and blue cheese in the slit...roast in oven until medium rare...Yummy!

I did these the other night like this and it was awesome

Butterflied the Tenderloins into small one inch thick slices
couple table spoons of Olive oil in a hot pan.

Coated with Flour and Salt and Pepper.

Was awesome!!

Soak in water for a day or two. Smother with freshly cracked peppercorns pressing them in. Grill and eat.

Put em in a ziplock bag with some zesty italian and marinade overnight. Grill em the next day!

Personally I'd rather have them cooked in an iron skillet than on the grill.

I just get some canola oil real hot and drop the butterflied chops in the skillet. Let them cook until they're as you like them and serve. (The more rare they are...the more tender they will be)

Because the chops have no fat in them, they are to be cooked REALLY FAST and HOT. That is the key.

Butterflying and frying is good, but my favorite way is on the grill. Cut each tenderloin into halves or quarters depending on the size of the deer. Then poke your knive through end to end. Stuff onions, proscuitto, whatever you like into the slit. Then marinate several hours in your favorite marinate. Do NOT overcook the tenderloin.

Rare,,, in a word. What ever I don't eat can walk over to the fridge itself.
