RE: Reubarb Pie!!!

I owe you one, so here go's:

1 1/2 lbs rhubarb
1/4 c h2o
1/2 c sugar
1 tsp lemon juice
1 lb strawberrys

1 1/4 c flour
1/4 c sugar
1/2 c butter

cut rhubarb into 1 " pieces
boil rhubarb and sugar in lemon juice and water til rhubarb is tender.(about 20 mins)
Add strawberrys after about 10-15 mins

blend flour and sugar and butter to resemble crumbs
Pour mixture in pie shell and put flour crumbs on top. bake for 25 mins or crumbs brown.

I like the graham cracker shells for this, but you could use the regular kind.

My ex ma-in-law makes this and it's my fav.
This recipie comes from the Better Homes and Gardens cookbook, so is not mine

I hope you like this one.
The biggest problem you'll have is trying to get rhubarb. I don't know if it does well in fla, but it does here. If you can't find it, let me know and I can get some root stock for you.

Good Luck. Capt Brad.

Yum Yum!! That is one of my all time favs, especially with vanilla ice cream.
Tree climber, if Brad can get you some root stock, it will come up every year for you. I know that it does here in WV and we are considered zone 6.
Another recipe you may want to try is:
2 eggs well beaten
2 tbs melted butter
3 1/2 c. finely chopped rhubarb
1 3/4 c. sugar
1tsp cinnamon
1/2 tsp. nutmeg
1/4 tsp salt
1/8 c. flour

Mix all dry ingredients, Mix eggs butter and rhubarb. Then combine and mix thoroughly. Pour into an unbaked high fluted pie shell. Bake in a pre-heated 375 degree oven for 45-50 minutes til set. If a wooden toothpick stuck in the middle comes out clean it should be done. Let it cool for at least 20 minutes or so before eating......place lots of vanilla ice cream on top.

I'm going to try Brads recipe ....like the idea of strawberries mixed in

RE: Reubarb Pie!!!

My wife makes rhubarb pie and rhubarb crisp that is so good I' m surprised it' s not illegal. Eat it warm with some ice cream for a real taste experience. My favorite spring meal includes crappie fillets, home fries and stewed rhubarb over homemade biscuits.

We are down to our last 2 gallons of our rhubarb wine and I am sure going to miss it. Goes great with wild game or fish. Going to make a bigger batch this year.

As kids, one of the great treats was geting a cup of sugar, and a fresh stalk of rhubarb. Dip the end in the sugar, and take a bite! sweet and sour at the same time!
