smoked cabbage with any wild meat
Take one cabbage head and cut a hole in the middle. Stuff it with chopped apple pieces, and butter.Wrap it in foil and smoke it a 225 degrees for 2 hours then unwrap and continue for 1 hour or until soft. Makes a great sidedish!!!!

Probably the best collard greens I've ever tasted came from a now defunct bbq joint near my home, the guy who ran the place was a retired 5 star chef at upscale restaurants across the globe. He smoked the greens with the meats, which took around 14 hours, imparting them with the most delightful rich flavor and succulent texture. Just hearing about that smoked cabbage makes me want to try it. [8D]
