RE: deer jerky
I like the following recipe, and havent heard any complaints yet.
Cut venison into thin strips.
Combine the following into a tupperware container (or plastic ziplock bag):
-Soy sauce
-1 small can pineapple juice
- Liquid smoke
-Worcestire sauce
- black pepper
- brown sugar
- sarachi chili sauce (find it in the asian section, red chili paste in a squeeze bottle usually)
- Crushed red pepper flakes.
Marinate the meat in this mixture for 3 days, then dehydrate.

RE: deer jerky
Here is a deer ground recipe I use:
3lb's deer ground
1/2 cup soy sauce
1/8 cup Worshershire sauce
2 spoons liquid smoke
1 spoon garlic powder
2 spoons cure salt
4 spoons cayanne pepper (optional)
3 spoons brown sugar
I usually let it set in the fridge for atleast 24 hours and then use a jerky gun to put it into a dehydrator.
