Cooking wild turkey on a campsite?
It's my first bird, a small Jake. I tried to pluck him but ended up having to skin.
We are going camping for our Canadian long weekend in a few days and I would love to be able to cook this bird on the fire.
Any ideas?

A wild bird is quite a chore on a campfire. Wild birds have very little fat and the legs are pure rubber if you cook them quick. I would suggest you cook only the breast on a grill. keep the legs and thighs for a stew. To keep the turkey moist you should brine it overnight in a solution of 1 cup coarse salt, 1 cup brown sugar and 20 cups water. Then grill the breast until the juices come out clear. Not too easy on an open fire. Good luck. It just takes a lot of patience and a few beer while watching the cooking process.

Thank you, looks we are going to stay away from the open fire if it may cause problems, there are other ways we can do it that keep the risk down a bit.
When you speak of the brine, should that be done before initial freezing or prior to cooking?

Here is one that you can use . Although it is for rabbit, turkey will work fine in the recipe too.
Nuggets McRabbit
Boneless rabbit meat, cut into bite sized pieces
½ cup flour
½ cup Bisquick
¼ tsp. onion powder
¼ tsp. garlic powder
1 tsp. seasoned salt
1 egg
2 Tbs. oil
1 cup club soda
Oil for frying
Mix flour, bisquick salt and spices. In a separate bowl beat egg until frothy, add oil and beer. Mix and add to the flour. Mix well. Dredge rabbit in plain flour then dip in the batter. Fry in oil until golden brown on all sides. Serve with BBQ sauce or honey mustard.
