good charcoal with wood chips in it is hard to beat.

Real mesquite is really hard to beat hickory is good also and if you are just smoking sausage pecan is my choice ...

Not a real big mesquite fan, love hickory and apple. Stumpled on some pecan a while ago and haven't had the chance to give it a try. Maybe for some salmon with the next run...........

Don't forget to consider the electric smoker. It's easy to use, clean to the touch and doesn't take a lot of babysitting while cooking. Put in a few soaked hickory chunks every couple of hours (cheap bag at Walmart for about $4.50) and the smoker does the rest. Before you know it you'll have some great smoke flavored meat; and moist too.

charcoal all the way i cant get enough of it! maybe i should switch to gas so my food wouldnt taste as good and would last longer! lol probly not.

I like to start with gas to cook the food a little, faster heat up and cook times, then put it on charcoal to finish and add flavor. so a little of both worlds

Allways make time for charcoal. Fire it in a charcoal chimney, never uselighter fluid.Use the charcoal bag for paper to fire the chimney.

BBQuing is nothing but wood. Pecan is my favorite. Mesquite can leave a bitter flavor if you are not real careful. Low and slow is the method. Just my 2 cents.....
