Recipes for upland birds
Hey guys.
I was just curious as to how you guys like to cook up your upland birds, specifically chukar and pheasant. We have tried frying up the pheasant like chicken, looking for something else to try. Thanks. Parker |

Try this Rebel. Cube the breast (about 1 inch cubes). Then roll in bread crumbs. Put a small amount of olive oil in a skillet. Cook at medium temp until brown. They are good just like that, but what I like to do is add some gravy to the mix (chicken flavor or make your own) and let simmer for a few minutes. Put over rice or noodles. Simple, quick and tasty!

Cut upland bird breast meat into strips.
Slice each jalapeno into 4 strips (if you don't like it too spicy make sure you remove all inner seeds and skin). Half cooked bacon strips. Now comes the assembly... Wrap breast strip around a jalapeno strip. Then wrap a 1/2 slice of partially cooked bacon around each breast/jalapeno combo. Now stab through and hold the entire unit together with a skewer stick or shish-ka-bob rod. Repeat the process until you fill the skewers. Place on the BBQ and heat until bacon is fully cooked. Some people add BBQ sauce to finished product or marinade the meat ahead of time. Many times this appetizer turns into a main meal as they consumers can't get enough. I've ran out of marinaded meat and BBQ sauce on many occasions but they chomp down the "unseasoned" combinations just as fast. |
