help on sausage
 
need help on sausage.Need to know what is the best mix of seasonings.Can I smoke the sausage in a smokey joe? How long would I smoke it for? Should I cook it first? I really need the help! HAPPY HUNTING

I CAN PROBABLY HELP YOU. I AM A MEAT CUTTER AND I DO A LOT OF SUMMER SAUSAGE IN THE STORE WHERE I WORK. I CAN PROBABLY HELP YOU OUT BUT I NEED A LITTLE MORE INFO. SUCH AS WHAT TYPE OF SAUSAGE (SUMMER, COTTO, HARD SALAMI) AS FOR HOW LONG USE A MEAT PROBE AND WHEN THE INTERNAL TEMPATURE IS 165 DEGREES, TAKE IT OUT OF THE SMOKER AND PUT IN A LARGE PAN OF ICE WATER. YOU REALLY NEED TO REGULATE THE SMOKER TEMPATURE NO HIGHER THAN 190 DEGREES. IT WILL TAKE 6 TO 8 HOURS.

Sorry I took so long to get back to you. I want to make summer sausage,and I"m in need of a good recipe. I've never made sausage before.So bdbullets if you can help me I would appreciate it. I'll check my board tomorrow. If there is something I can do for you let me know! HAPPY HUNTING!
