Deer Tongue: Extraction & Recipe?
 
A friend asked me for the tongue the next time I got a deer - how would you cut it out? Have you done it?
And any recipe would be appreciated.
I've had beef tongue, it tasted kinda like a cross between pastrami & bologna. Not mind blowing, but now I'm up for the challenge more than anything else.
This was my first year butchering my own hunt, now I just want to get better and better and this intrigues me.

Used to have a guy here that always wanted me to savem beef tongue. Cut it out as far back as you can usually they boil it, then skin it, slice and serve. I don't mind the odd bit of tongue but would never eat it.;)

hmmm.... ya...i've heard of boiling... slicing into strips and frying with sauce... pickiling...... just not brave enough to try alot of the recepies....

Boil it, skin it, eat or pickle it. Great hot or cold. Very tasty. It's a shame to waste a tounge, once you try it you won't throw away another one.

I don't think I can taste something that might be tasting me back :)

Just kidding, I have had beef tongue tacos before and they were great. Very popular with Mexicans, La Langua I think it's called. I will definitely be trying deer tongue the next chance I get...

Cut it out ,soak in olive oil, garlic, salt n peper put in frig over nite then take it out and throw it the trash and order a PIZZA!!![8D]

Deer tongue huh? never had it buy my buddy used to havea huntin dog who loved to eat deer pecker....go figure, WV huntin dog:D

Use a thin bladed knife, a filet knife or caping knife works well, and cut the tendon under the tongue, then cut around the base of the organ all the way to the back of the mouth and remove. Boiling is an incorrect term, that will turn the meat into leather, just simmer it at low heat until tender, about 3 hours in a covered pot. You can season the simmering water any way you want. Some folks like to simmer theirs in beef or chicken broth, if I want something that tastes like beef or chicken I'll buy it at the store. Salting the water is a matter of personal taste, I don't since it can toughen the meat. Once the tongue is cooked you need to skin it, then slice it into thin slices for eating fresh , bbqing, or pickling.
