goose jerky?
 
Any one ever made jerky from geese? If so, got a favourite way of doing it that you'd like to share?

Friend of mine does all his geese in jerky. excellant! I believe any jerky recipe will work but i'll see if he has a special one.

Tuffcity, I have tried many liquid methods...but their is a dry seasoning and cure mix by Hi Mountain especially for Goose that is outstanding. Many flavours, but our favorite is Mesquite. It is reletively cheap in these parts and makes about 20 pounds worth in a package for like 8 bucks (CDN..EH!). Best of all no messy oven, dehydrator or smoker like the liquid marinades produce. In fact I use it for big game and beef as well now...just way to easy.
