RE: Grouse!
I like to season them ( spices of your choice) and add some olive oil. Let them sit in a bowl for a little while and cook them on the barbecue. The oil stops them from being to dry when eating...

I love mine Beer Battered (pancake mix and beer insted of tempura) Add whatever spices you want... If you want Cajun, add cajun spices into the batter.

I slice it and fry it in butter with just salt, pepper and a little garlic.

RE: Grouse!
I slice it, then dip it in a mixture of a little milk with one beaten egg. Then, I coat it in Italian seasoned bread crumbs and fry it in bacon grease.

RE: Grouse!
All you fryers - doesn't the meat end up tough as hell? If not, what's your trick? I've tried frying them with little success. Braising them for a few hours seems to work quite well. Last weekend's batch I braised in cider with bacon, onions and garlic. Spectacular. Although it took 3 hours.
