squirrel?
any ideas how to cook squirrel ? im going this year and hopefully going to get some and i want ideas!!!

Squirrel Bake
3 cups cooked squirrel, diced 1 8oz. Pkg. egg noodles 2 3oz. Pkgs. cream cheese 1 cup creamy cottage cheese ½ tsp. onion powder ¼ cup minced parsley 1 can cream of mushroom soup 2/3 cup milk ½ tsp. salt ½ tsp. poultry seasoning 1 ½ cups soft breadcrumbs 3 Tbs. melted butter Preheat oven to 375. Cook squirrel in a pressure cooker with 1-cup water at 15 pounds pressure for 20 minutes. Cook noodles per package directions; drain and place in a greased 9x13 baking dish. Combine cream cheese and cottage cheese and beat for 2 minutes with an electric mixer. Stir in the onion powder and parsley. Spread half of cheese mixture on noodles, place ½ of the squirrel meat over the cheese. Combine the soup, milk, and poultry seasoning mix well and pour over the squirrel. Repeat layers. Combine breadcrumbs and butter and spread over the casserole. Bake for 30 minutes, or until heated through. |

I clean em, boil em, then grill them with some Carolina Treet.

Squirrel gumbo or squirrel sauce piquante. Or, just coat them in flower, partially fry them, then bake 'em in the oven or a crock pout with a little water'til the meat is almost falling off the bones

I'm a mostly a "make it up as you go" type so recipies are a bit vague.
A few squirrels, cleaned and parted roll in flour, dip in egg wash, coat with batter mix, Drop in deep fryer until done, toss them in hot wing sauce. Serve with celery and blue cheese dressing. Buffalo Style Squirrel Bits! Tricked more than a few friends with that one. They though I fried up some "funny looking" wings and such. |

Boil the meat until browned, chop up a bit, then toss into pie shell with gravy, potatoes, onions, celery, etc. Cover with pie top and bake at 350 for around an hour. Works great with rabbit also.

I'm sorry to ask a question rather than give an answer, but has anyone ever tried sqirrel tacos or fajitas? I just thought of it, not sure if it works. :D

Do a quick fry then wrap in foil and bake.meat will fall off the bone.

I like to brown it in the skillet and then put it in a hot spaghetti sauce.

Most poultry recipes will adapt well to squirrels .

Squirrel Casserole this is a good one-
4 cups squirrel - cooked, boned, cut up 1 pkg. Pepperidge Farms dressing or your favorite dressing 1 can cream of mushroom soup + 1 cup of water 1 can cream of chicken soup 1 stick butter cut up on top Layer ingredients in casserole dish with butter on top and cook 30 minutes at 350 degrees. |

My grandmother battered the pieces in a milk and egg batter and fried them (think fried chicken) and she made squirrell dumplings (just like chicken & dumplings only you use squirrell instead). I have baked a few and they turned out okay (gotta be careful about them drying out in the oven) and put them in foil on the grill in BBQ sauce, very good.

I generally throw them in a crock pot with veggies and season to taste.
I have tried it on the grill, it's pretty tough, so I just stick with making stew out of them. |

A hundred years ago we just seasoned them and wraped them in bacon and grilled.

i got a couple in the freezer right now from this past weekend, and im thinking about frying them a little in a pan with oil, then wrapping in foil with barbecue sauce and baking in the oven. But my question is how long and at what temp. should i bake them? I know i dont want to cook them fast because they can dry out, but the foil should help prevent that.
any suggestions on time and temps? should i bother frying first as someone had mentioned earlier? or just bake them in foil? |

Crock pot, add onions, minced garlic, diced tomatoes, and any other veggies you like. If you want to add some real flavor, add some kilbasa saugage on top and let that all cook up for at least 6 hrs.

is there anything that can kill that taste? is there anything that can compete with the squirrel taste? i usually just boil them and feed them to the dogs. but i will try the bacon idea.

Cut the squirrel into quarters season the pieces with salt pepper , season all , garlic powder , and onion salt. Flour up the pieces nicely and in a heavy skillet heat up some oil, on a medium heat brown all the meat ,once all the meat is browned add enough water to almost cover the meat then reduce heat to a low simmer cover tightly and let simmer for 1 to 11/2 hours depending on how old the squirrels are (young tender ones you can almost pan fry )turn the meat over after about ¾ hour and check to see if more water is needed once your squirrel is tender remove it from the pan and add water to the pan to make some of the best gravy you have ever had. Anyone have a recipe for squirrel & gravy? My cousin is always saying howhis friends mother would make them squirrel with gravy when he was younger and i was just looking for a recipe for him.

You have alot of replies but I have a great couple of recipees that I use.
Skin em and clean em. This recipee calls for three squirrels but you could expand it. Take the cleaned carcasses and par boil in salted water for about 10-15 minutes. Rub the meat with fresh cracked black pepper, rosemary and garlic. Lay the in a dutch over whose body ismoderatley hot and the lid should be medium hot. Slice an onion and lay on top and around the meat. Then slice potatoes at no more than 1'4" thickness and lay them in there too. Drape a few slices of bacon over all. replace the lid of the dutch oven and pile coals on top. In about 30-45 minutes, the meat and potatoes are done You need to check out a book by Horace Kephardt called "camping and woodscraft". I believe it is on tennesee press. He has alot of wild game recipees and also chapters on marksmanship, axemanship, cabin building, bivuoacs, and compass use. bon aprtite okcmco |
