deer meat receipes
 
hey,
anyone have a good venison recipe or a good idea for marinating venison. I recently tried marinating some sika deer back straps in BBQ sauce and AL for about 45 minutes with some cinnamin, salt, lemon pepper and another seasoning called season-all. I have a friend who says marinate it in some milk over night, i might try that. Does anyone have any other recipes or tricks of the trade to share in regards to cooking good, tender deer meat.

1 Cup Olive Oil
6-8 Cloves Chopped Garlic
1 TSP. Of Each of the Following:
Oregano, Seasoning Salt, Lemon Pepper, Garlic Pepper, Thyme, Rosemary, Dried Chives, Dried Parsley Flakes
½ TSP Marjoram
½ TSP of Paprika
2 TBSP Soya Sauce
1 TBSP of Oriental/Asian Seasoning (Optional)
3 TBSP Fresh Squeezed Lemon Juice
3 TBSP of Mayple Syrup

Mix merinade and add to meat,sprinkle some garlic powder over the top &then place in fridge covered for upto 48 hours(Ziploc or bowl). I like to mix the meat periodically during the merinade time and if I deem required will add more garlic powder. We love the garlic so hard to ever have to much...but personal taste should dictate your routine.

Milk, Sprite, or Italian Dressing is the easiest way to take any gamey flavor out of the meat. Let saok 4-6 hours then use whatever seasonings you like...course black pepper, garlic, and sea salt are my favorite...grill outdoors or charcoal or propane but DONT OVERCOOK!

I take all my venison and season with, garlic powder ; lowyers seasoning ; black pepper ; cavnuagahs ; place in ziplock with 3 or 4 tablespoons of zesty Italian salade dressing.press all the air out, zip closed.place in fridge overnight , turn over a few times.

then place on grill till med.(above all ;don't over cook)or flour lightly , and pan fry till med.
