Anyone have a good vennison stew recipie? I lke it a little spicy. EJ

I love stew on a good cold day, but we havent had any of those here this year.
I start taking things out of the freezer, cut corn, okra, peppers, onions, blackeye peas, green beans, tomatoes, just what ever I have. I have a large pot. lol
Get these going and then start adding spices. What kind? Just depends on who is coming over and what kind of mood I am in. If I have some good hot peppers then I go light on hot spices and shoot for flavor.
Then I start the corn bread.
Never have gone wrong with stew.

I kinda went the way of chili with this. I used the core of a recipie for bison chili from teds grill and then messed with it. It Rocks! EJ

Just add spices a little at a time and taste after it has had time to mix with everything. Same with the peppers.
If I can start my peppers this year I am going to have some really HOT ones. I will need to adjust to the heat factor when I cook. lol

Just made a Batch in the crockpot yesterday. I used Elk and Venison:).
My stew is sorta like saved leftovers. Such as, When I make a Prime Rib or Roast Beef, any leftover gravy goes into a plastic container, then frozen. The same goes with leftover vegetables such as corn,carrotts and stingbeans, Come time to assemble I coat the meat in flour and brown in oil. Throw in whatever leftovers I saved. Then add some onions, celery, peas, carrotts, peppers,garlic,sometimes potatoes andmore veggies if needed ,Don't for get the pepper. Add some water if needed.The salt should be added after it is cooked or at the table. It can be thickened with a roux or cornstarch when done. Pass the crusty bread or corn bread. it's all good.:)

Here's my deal. I cut venison up in 1" chucks or less. Cut me up 3 big tators into 1/2" chucks. Put some baby carrots in there. Cut up 1 stalk of celery. Put in can of cut beans, can of corn. I make up 3 cups of beef broth using bullion.

I add it all together and start adding the good stuff.
1-2 tblsp of salt
1 teasp of cayenne pepper
1 teasp of tyme
1 teasp of sage
1 tblsp of Old Bay or JO's
2 bay leaves
2 tblsp of peanut butter or tapioka (to thicken)
1 whole yellow onion diced up real good.

I then take out some of the broth and add flour. You have to do this slowly to mix it evenly. I like 1/2cup of flour. Depends how stewy you want.

Cook in crock for 8-12 hours dependin on veges on low.
