Deer sausage recipes
I would like to print out some deer sausage recipes if the members could post some of there favorites that would be great.
I have always taken my deer to a butcher, but with the rising costs i have decided to try it myself. I have downloaded a video on butchering and the next deer taken i am gonna give it a go. the sausage recipes i would like to see posted are only recipes that you have tried and make over and over yourself. I am not gonna put it in caseings but am just gonna leave ground. I will need excact measurements of pork and seasonings to add per pound. with all that said here the types of sausage i am looking to learn how to make. Sage: I love sage sausage. So a recipe that uses a good amount of sage would be great. (most important) Spicey: recipes for spicey sausage would be great also. mild: recipes for mild sausage would be great also Sweet: Sweet sausage recipe also wanted. I am hopeing to receive multiple recipes on each and to see how close everyones recipes are. |

I have 2 Brat Recipes both very good:
First recipe: 2 lbs. venison 8 lbs. fresh pork shoulder 3 whole eggs 2 cups non-fat dry milk 1 tbsp ground white pepper 1 tbsp mace 1 tbsp nutmeg 1 tsp ginger 5 tbsp salt 1 cup cold water Grind all meat through 3/8" grinder plate. Combine the meat and all the ingredients and mix thoroughly. Stuff into 32-36mm hog casings and twist into 6 inch links and/or just make into patties. Second Recipe: 7 lbs. fresh pork shoulder 3 lbs. venison 2 cups non-fat dry milk 2 whole eggs 4 tbsp salt 1 tbsp sugar 4 tbsp fresh chopped parsley 1 1/4 tsp white pepper 1 1/4 tsp black pepper 1 tsp nutmeg 1 tsp mace 1 tsp ginger 1 cup cold water Grind all meat through a 3/8" grinder plate. combine meat and all ingredients and mix thoroughly. I make a lot ; but it is wild pork.I find deer sasuage is ; well just not what I like.have tried several different people's and didn't care for it.
