RE: Do you process your own deer?

This year was the first time that I ever did my own and it turned out great.I bought a 32 lb grinder and made Italian, brats&breakfast sausage. It is really good.I took a deer in early this season&opened the package up and compared to the one that I did myself ,I found hair on the one that I didn't do and it was much bloodier. The difference in flavor of the shop processed deer, compaired to the home processed is huge. Not to mention I don't think you always get your own back. They also start nocking your deer out right away whereas if you do your own,you can hang/age your meat wich makes a big dif.Get rid of all the silver skin and fat, age your deer and you wouldn't believe how tasy.

my grandfather was a butcher and taught me how to process deer, I find it enjoyable and another reason to get together with my hunting buddies for their "help".

To all of you who butcher your own deer I would HIGHLY recommend going out and spending about $100 (depending of how nice of one you get) on a vaccum sealer, beats the hell out of freezer bags and freezer paper and it resealable, I just added one to my butchering tool kit this year, dont know how I managed without one

This morning for breakfast I had venison steak tacos they where delish.I added onion, garlic, lime cilantro salt & pepper.Fried the corn tortilla with mix,and cheese inside mmmm good.:DThe oil I used was olive oil ,so besides the cheese it was a pretty healthy meal.
