is this jerky safe to eat?
i have had some thin sliced deer jerky in the food dehydrator for 4 hours set on 160 degrees is it safe to eat or does it need to be in longer?

i should also say that the meat was frozen for 11 months then marinated for a couple days in the fridge then put in the dehydrator for 4hours set on 160 degrees

I just did the same thing about a month ago... Im still here!

dried meat has to meet the internal temp of 158 degrees farenheit to kill off all the bacteria. As long as the meet is a little chewy yet and you had the dehydrator set at 160 you should be fine.

If you soak the meat in the right stuff, that is what preserves the meat. When it gets dried, it is OK. Temp doesn't matter much.

Seems a little short on the time to me, but it's probably ok to eat, just won't store as well long term. Bottom line is smell it, if it smells like something you wouldn't eat, don't eat it. (that's standard advice we used to give customers at the butcher shop I used to work at when they'd call and say "I bought this X a few days ago, is it still good?"
