Default What would eat a deer tail?

We let a buck die over night before we went in to get him the next AM, and when we got there some animal pulled all the fur off of his tail, and started to eat the meat underneath his tail, and did not touch any other part of the animal.

Any idea why or what animal would just pull a deer tail off in the middle of the night?

I have heard some old farmers say the same about a dead cow.
walked up on it and its stomach was moving. Gave it a kick and out crawled a possum

I would think that might be the work of a coyote.
