I keep mine in the frig, my inlaws. Yep, went back for the holidays and forgot it in their frig. Mold does not sound that bad, just kidding.

Try using sodium nitrate. Keeps for awhile with that. Not that mine gets a chance to keep much more than a week. I cure/season my own and now have permission to drop it off at my fave butcher shop....... I work/help out there part time I guess.
