aging deer poll

how long do you age your deer.
Also let us know how do you hang it quarter it and keep it in the fridge.

if it is cold outside i go about 2-3 days but if it is warmer i quarter it and it goes in the fridge

We are lucky enough to have a walk in freezer available to us so if we cant cut it up right away it goes into the freezer.

I put mine in a cooler covered in ice for about 5 days or so. I dont know why but that is how i was taught as a kid. i was told it made it taste better so of course you believe your family when your young so i have always done it.
