A friend has a electric and hand grinder i can use so i am going to take that cash and buy a new vacum sealer. I saw on a how to video a guy wrapped his meat in butcher paper then vacum sealed it. Why did he do this.

We have butchered our own deer as long as i know of. they have pics of me when i was 3-4 and my dad was butchering a deer. We all go to the same guys house to do our deer so it cut down on cost. Everyone donated a piece or two to help with everything.

Tim,
Wrapping the meat, then vacuum packing it can make it good for up to 2yrs. according to some reports. I've gotten that long out of some of my stuff that I misplaced and didn't know I still had. In all honesty, if you have a couple of GOOD SHARP KNIVES, that is all you need butchering wise, then a grinder and vacuum packer are nice to have to get the meat preserved for longer storage.

I got my grinder from Walmart for 70.00
Most butchers use a simple hacksaw to cut apart the back legs..all the other joints are done carefully with a knife..I've eatten venison up to 3 years old with no problems..If you don't have a vaccum sealer you can use cling wrap ..Wrap it pressing out all air out..then wrap again..Finally, wrap with butcher paper and label it such as Sirloin Tip 9/ 30/ 08

Here's the 70.00 Walmart grinder and me making breakfast sausage..I love this grinder and have made about 50 pounds so far..no problems.
