I have no idea, guys. I can't wait to see one, though.

Could be an aoudad. That's exactly (remembering back) what my taxidermist One of them)thinks they are (he hunts an adjacent farm).

RJ....the does here are small.Across the street from my home......my neighbor'shave a BUNCH (15?) of goats....and I agree that they're small. Would being in the "wild" do anything to allow them to grow larger?

I have eaten plenty of goat. As a general rule if it is quite young it will taste good.
The meat can be quite "goaty" tasting sometimes, so to reduce this i soak the meat in brine overnight with a small amount of baking soda added to the water. This draws the blood out of the meat and makes it less gamey and more tender.

Good luck

Some of the best soft tacos I ever had came out of the bowls of a mexican section of San Antonio. They were made from goat meat. Just wonderful things.

I had baby goat, or "goat veal" in Portugal this Summer while I was there for work. I was kind of disappointed. I was hoping for a unique taste but it was pretty much just like tender pork shoulder. I would think the bigger and older the tougher and nastier it would be.

Ate goat in Bosnia that was roasted on a spit. The locals in small villages sold that and some kind of liquor made of wild plums on the side of the road for money since they were impoverished. I thought it was very good actually. No idea what kind of goat, but I think it is like any other game; it matters more in how you care for the meat when you dress it out and then how you prepare it. There are cultures out there in the world that can make a many meats that are considered inedible by westerners taste good because they know how to take care of it when they dress it and how to prepare it.
