.2nd thing is (not trying to start anything here), I didn't think a Vidalia could be grown anywhere other than Vidalia, Ga.. It has something to do with thesoil. Another variety of sweet onion, thatI would agree with.

First, Do what you want. If you're not going to try a recipe first before tweaking, you have a ego problem. Get over it.
Second, Iron Chef originated in Japan and if you are not Japanese living in Japan, you must be counterfeit.

I have a pot of your recipe simmering right now. Boy does it look good. I love the smell of the liquid smoke when you add it to the onions. I could only find Hickory...is that ok? Also, for the sausage...what kind? Hot or sweet? I went with the hot. Thanks again for a great recipe. I hope I do it justice.
