As much as I lovetenderloin,........... I love it even more on the bone.

I'm gonna go with venison chops, prepped with a little olive oil and Montreal saesonings, then thrown on the grill(high heat)........right before you take them off(cooked med. of course) hit them with a touch of cilantro.

But better than backstraps are filets! That's the underside backstrap for those that don't know.;)

In a Porterhouse T-bone steak the large part is the backstrap, the smaller the filet. Opposite sides of the backbone. :D The filet is always better.

Next to backstraps I would go with fresh walleye or crappie. Or an elk steak.

Although after reading this I could hear myself getting fatter, I would have to add on some Wild Turkey Nuggets in Andy's batter, and......let us not forget a cold brew to wash it down!

Nothing but a good piece of fish. It would be a toss up, but I'm going with a nice wild brook trout or walleye through the ice. Of course a nice shellcracker or bullhead is good too. And I can't leave out a good piece of grouper. OR... maybe a nice fresh lobster cooked to perfection.
