I have hunted elk once and hope to do it again.
I also want to try a Caribou hunt. Seems like it would be neat seeing those herds of Caribou crossing the tundra, and then trying to sneak up on a big bull.
And Moose in the rut would be the most awesome rush I can think of. But way too much $$$$$.

If I could , I would like to hunt Brown / Grizzly Bear , Moose and Cougar / Mountain Lion.
I think it would be an awesome adventure to hunt those big animals and it would be a real challenage to harvest them.

I think sheep would be my first choice since i've not yet drawn a tag.
#2 is a toss up with elk taking a slight lead over big mulie bucks.
I havent ever had a chance to be on the shooting end of a whitetail hunt either so that would have to fall in there somewhere.
