Tallow?

I was just wondering what tallow is? I hear people say it all the time and have no idea what it is.

My processor refers to "adding tallow" as the process of adding pork to my deer meat to give it enough fat so it will have something to fry up in...

is leaving the tallow on the outside of your steaks okay? will it cook off?

RE: Tallow?

When I process my deer at home I buy a little beef tallow off of a butcher to add a little to the deer meat. It adds a little to the flavor of the meat. I slip a pinch into the grinder when I'm making ground venison.

Cougars, I'd try to get as much of that off as I could before cooking it...

Yep, less tallow equals a little less gamey meat.

But you add a little beef tallow and you will have some real good burger.
