Favorite Deer Steak Recipe?
;)Come on, post your favorite recipe for deer steak. I'm interested to see what everyone comes up with and maybe even try some. Also, can anyone tell me if it's ok to cook deer steak medium well, because I like beef that way and I think deer would be great that way too.

I dont use any thing special but I can tell youu this the longer youu cook deer the worse it gets. Try medium rare

Yeah my dad made some steak tonight and he cooked it all the way through to well-done. It turned out dry but it tasted ok.

Try putting it in aluminum foil cut up some green peppers and onions add a little steak sause oh yes and cover the steak in butter then salt and pepper and put it in the oven on broil kinda make a little tent out of the foil leave for about 10 t0 15 minutes and then it will not be so dry or tough.

Trim away all fat.
Tenderize it with a tenderizing mallet or the edge of a saucer. Roll it in flour Fry it in butter or margerine. Season it with salt, pepper and garlic powder as it is frying. Another recipe; Marinate it in Italian salad dressing for a day or 2. Cook it on the outdoor BBQ |

I'm not known to be a big fan of venison, but I eat every bit of what I shoot. I have tried everything and the best way in my opinion is to first trim ALL fat and membrane from the meat, slather it in Wishbone Italian dressing and cook it to medium RARE on the gas grill. I had some the other night and it was great. Cooking venison in a skillet on the stove is a waste of energy. Remember... NEVER over cook it.

I soak the cut up venison in Pet milk overnight, flour and season (I use Zatarain's Creole seasoning and steak seasoning) and fry till it's just right....I think medium well is best, I don't know why medium wouldn't be ok. Everybody says my fried venison is great!

I would try to put it in as small a bowl or container possible. You want the marinade to coat it pretty good.
My favorite way to make steaks is to either grill them or broil them under very high heat in the oven. The latter rocks during the cold Minnesota winter months. My favorite marinade (for backstraps,tenderloins, and steaks)is as follows: 1 cup soy sauce 1 cup dark beer 2 tablespoons Dijon mustard 2 tablespoons brown sugar 2 tablespoons minced garlic (you can get this pre-minced in a jar) Just whisk everything together and put totally thawed venison in it for 24 hours before cooking. |

I thaw it in the microwave on a plate. I then rinse them off, put them on the plate andjust dump dressing on it and throw it on the grill. Some people leave it in the fridge in the dressing for a few days but I don't see the need. I have found that leaving it in the dressing for days will actually make the dressing overpower the meat. If your venison has been frozen for a month or more it is perfectly safe to eat almost raw, so cooking it medium RARE is no problem. I think medium well might be OK depending on the individual cut but the more you cook venison steak, the harder it becomes. Always trim the meat completely, leaving NOTHING BUT MEAT. The tallow fat is where the gamey taste comes from the most.

What I do is take a backstrap medalion and butterfly it to where it is about 1/4-1/2" thick then I will douse the steak with olive oil on both sides,I then like to rub this steak down with "Emerils steak rub"I know I spelled his name wrong ya know the "BAM" guy.I then sear the steak on both sides for a couple minutes on the grill.If I don't use Emerils I'll still use the olive oil then use garlic powder, cyanne pepper,black pepper salt,and a pinch of oregeno .Try it you'lllove it.

My favorite wild game marinade:
I don't really measure any of these, I just go with what I feel at the time. (approximately) 1+ cup-Red wine vinegrette dressing as a base 1/4 cup-Panola jalapeno sauce (it's not hot, it just tastes great) 1/4 cup yellow mustard 4-5 dashes of worchestershire sauce couple splashes of soy sauce 1-2 TBspn honey 1 TBspn black pepper 2 TBspn minced garlic 1 large yellow onion (chopped) 1 green bell pepper 1 red bell pepper 1 yellow bell pepper sometimes I'll throw in a few pickeled jalapenos (sliced) to spice it up. Mix all this together and marinate meat for as long as you want. If I'm cookin a roast, I'll season the meat up a little with whatever I feel at the time, then I'll puor the marinade all over it (usually in the container that I'll be baking in) and then mabe throw in some baby carrots and taters. Put it in the frig for a day or so and then bake it (covered)at 275-300 at least 4 hours. Most of the time I try to let it go 6 hours at 275. Also for wild roasts, you might want to add 1/2 cup water before baking. Okay, now I'm hungry. |

I like to thaw mine, trim silverskin (usualy allready done before packing and freezing). I use McCormics marinads in the dry pack. my favorite is Montriall steak seasoning. it mixes with water, veg. oil, and vinegar. instructions on back of pack. mix up, put in gallon ziplock bag with meat, let sit in fridge overnight. grill med well or to liking. MMMMMM GOOD!!

That sounds good.See thats how ya cook,no measuring no exact science just throw in what you think may be good,and nine times out of 10 it will be.That's how I do things.I just picked a hen of the woods mushroom off a tree in my front yard today(I never tried them)and washed off a couple flouretts ,then whipped up some flour an egg ,added some fresh ground pepper salt oregeno, and fried in butter with olive oil ,man was that good.

I like my steaks the same way i like my tenderloins. Flour & Mccormicks monteal steak seasoning. Then fried in butter. Sometimes i throw so onions in there also.

Don't listen to ANY of the Recepies -listed so far - Listen - if you never take any other advice from me - Deer meat is NOT Beef - and While you might like beef WELL DONE - you will like deer meat DONE WELL much better!. By done well - I mean - MEDIUM RARE. Don't mess with marinade.............. Salt and pepper to taste - Use real butter - and fry till Medium Rare - It really really is just that simple - and very very good. I like mine on toast. The fresher the meat the better. Keep it simple and you will be surprised. FH |

I'm tellin' ya, the Chicago and New York marinades are the best I've tasted, and they're only about 2.50-3 bucks a bottle!

Try the A1 Chicago steakhouse marinade or the A1 New York Steakhouse marinade. Marinade at least 4 hours or so (I poke holes in the steak so it absorbs better) and cook on grill. I'm tellin' ya, the Chicago and New York marinades are the best I've tasted, and they're only about 2.50-3 bucks a bottle! 10-4 on the A-1 bottle marinades! I picked up both the Chicago and the New York Style last week and they are GREAT. I did up some Antelope steaks and a backstrap on the grill after a little garlic salt and light Montreal Steak Rub and an overnight in the A-1 and they came out awesome. Grill the backstraps on high for a couple minutes each side to sear in the juices and then finish to a perfect medium. (If any of you have never seen a person eat an entire backstrap in one evening it's not a pretty sight.) OH BABY.:D Oh and anything grilled over medium is "Steak Abuse". Somebody call the cops.[:-] |

I fix it numerous ways, but below are two of my favorite way.
Butterfly the hams or the tenderloin into about 2.5 " thick cuts. Wrap bacon arount the edge and secure with a toothpick. Sprinkle McCormick's steak seasoning all over the meat. Soak in Olive oil overnight. Grill medium to medium rare. Or I fry it like a green tomato. Salt pepper and roll in flower and fry in a hot pan .......... |

Am I the only one that uses Dales steak marinade? Maybe its a southern thing? I use it if I am in a hurry, defrost a pack of butteryfly backstrap steaks and soak in a ziplock bag of dales for about 15-20 mins while the grill is heating up and then throw them on the grill for about 6-8 mins per side depending on how hot the grill is. I agree that simple is better. I will be trying some of these recipies out when I have some time to prepare them. The good thing about Dales is its a marinade but it only take about 10-20 mins soaking time and its ready, not over night like most. If you need some LMK.

Mix equally, cover frozen deer steaks. Let set in fridge till thawed, stirring occasionally. Cook on grill or pan fry. This marinade is good on any meat, chicken, steaks etc..[/align] |

I prefer grilled meat and my favorite recipe has already been mentioned... marinated meat in Montreal Steak seasoning mix. I add a few cloves of garlic for good measure. I swear it only take about 5 minutes to grill those things to perfection... medium rare all the way!!
My mom has a very good method/recipe also. Brown the pieces fairly well in butter/olive oil. Turn the heat down to low and simmer with a bunch of onion layered over the meat and a bit of water for moisture. We cook it this way for about 45 minutes and it is delicious. I've passed the grilled version off as beef many many times to unsuspecting folks.... |

Cut the backstraps into 1 1/2" filets. Wash them Wrap the edge with bacan and secure with a toothpick Salt and Pepper or use your favorite seasonings Get your pan very hot Sear both sides for about a minute on each side Place in oven for 10-12 min @ 325 Now them sum tasty viddles;) |

Just made some...
I used a tenderizer hammer on both sides of my steak chunks.. Then ...I sprinkled Montreal Steak Seasoning on them. I had a cast iron skillet with about 1/8th inch of HOT olive oil. I tossed the steaks in the skillet . When halfway done I added onion chunks, caned mushrooms and cut up bell peppers. I served them on egg noodles. We had none left over .. And yes, you can eat venison that is pink in the middle.Good stuff.;) |

We eat a lot of venison around our house and this is by far our favorite. Take one of the choice cuts, tenderloin, loin, tip roast, etc. Cut that into 2"x2" pcs. (approx.) and marinate the pcs. overnight in a store bought roasted red pepper salad dressing, Atheno's is best. Wrap the pcs. in small slices of bacon, secure with a toothpick, grill over med./high heat until med. rare. Our kids gobble these up. If you wish, you can dip them in your favorite bbq sauce, hot wing sauce, etc. For those of you who have never tried it, I cannot tell you how good the roasted red pepper dressing tastes on venison.
Rob is right, grilling is the only way to go. DO NOT cook past medium and medium rare is better. As far as keeping it simple goes. Try taking your steaks and drizzling a little olive oil on them and then sprinkle equal parts of garlic powder, Lawry's, and fresh ground pepper on them, then throw them on the grill. YUM! |
