Martinate in Milk???
Ive heard people marinate deer meat in milk to get rid of the gamey taste, does this work???

There's not much fat to get out of venison. I like to tenderize strips and put in milk for a few hours. I fry them up and they melt in your mouth and taste great. I don't always put them in milk for this long though, but I always use milk for my batter. The key to having tender meat is to tenderize it.

Never heard of milk before but you could use 1 cup olive oil and 1 cup teriyaky sauce. Taste great!!! Walt

I use milk with snappers...never would with deer.

My grandmother would soak meat in buttermilk (sour milk for all of y'all north of the mason dixon) if it had not bled out well. She said it helped soak the blood out of the meat and would cut the liver flavor.

I do that all the time , it draws residual blood from the meat and improves the flavor . Put the meat in a bowl or suitable size ziplock bag and add milk until the meat is just covered , soak overnight . Removing all of the fat and silver skin does far more to remove gamey taste , most of it is in the fat.

My wife soaks our deer roasts in milk before cooking and it comesout great. Always tender and not gamey at all.

I've never tried that before. I usually just beat it with one of those spikey hammer things. Will it really make the silver skin come off? I might have to try it.

I have heard of milk and italian dressing.
I have used Coke on ham before and I would imagine it works well deer too. |

We marinate some of our deer steaks and back straps in sweet milk and wostershire sauce. Not to get rid of the gamey taste, but because it's a great marinade.

Anybody ever use Dales steak marinade? I usually toss them in a ziploc bag for about 20 mins then toss them on a hot grill for a few mins. I have my steaks tenderized so they dont really need the coke. I know one thing NOT to try. I had a friend tell me to marinate them in orange juice overnight. I tried it and it tasted like deersteak soaked in orange juice. I couldnt eat it, I had to spit it out and throw them to the dog.

Deer has no "gamey" taste period, What people call gamey taste is: 1) busting the bladder, thus soaking the meat in deer piss. 2) Rubbing their hands/knives over the meat while skinning 3) hanging a deer (that gives it a nice rotted taste, unless You have a temp controlled walk in box to hang it) Honestly, I have butchered and eaten over 50 deer, Had 1 piece that was "gamey". turns out My nephew cross-contaminated the meat while skinning, He did not change out his latex gloves after removing the pelt. It does change the taste of the meat, but I don't use it with deer. My wife doesn't like the fishy tast of most seafood, so I'll soak fish for a while in milk.
HuntingEd: What are the deer feeding on where you hunt? The more browse that the deer rely on for food sources the stronger the "gamey" taste will be. When I lived in Michigan there was a definate difference in the taste between northern deer - browse and southern deer - sugar beets. |

If it's steaks or some other cut of meat, not a roast,put it under running warm water to wash off the remaining blood before you cook it.. Someone told me thatthe gamey taste comes from the blood. It seems to work well for me, if you don't want that taste. To me it doesn't matter but, the family likes it alot better.

I've tried milk, coke, italian dressing, salt water. Milk and coke didn't seem to affect the taste one way or the other. I hated the italian dressing and the salt water wasn't that great either. The thing that has helped me get eh best tasting meat is to try and get as much blood out while processing. Letting the meat cool for a few days and allowing the blood to drain off the meat.
