butchering knife
 
I am looking for recommendations of a good deer butchering knife. I will just be using it for deer processing, nothing else. I just processed my first deer and it was a pain because I did not have the right knife. What brand would you recommend me getting?

I do all of the boning with my regular hunting knife. It has a 3" blade. Then I go into my tackle box and get my fillet knife. I do all of my trimming with it. It is light and very sharp. I remove all the silverskin just like filleting a fish.

My fillet knife works wonders for cutting up steaks and deboning, I use my hunting knife for skinning and gutting. A good meat saw is also a necessity. I have a gerber tree and bone saw with a small blade that works awesome.

mathews said it near word for word I too use a fillet knife on all but the skinning and gutting and use a gerber combo saw that comes with a bone blade

I'm going to disagree with MATTHEWS. I never saw through bones. I hang the deer up and strip the big boy clean. Take all the meat you want right off the frame. Then I clean and cut with my fillet knife. I think the bone dust makes the meat have a funny flavor.

For final cuts, I much prefer a good, long, straight edge carving knife with a scary-sharp edge. It makes butterfly cuts a snap.

I've been using a basic fillet knife that I purchased cheap from Walmart. Works just fine. As a backup, I use another fillet knife that came with out kitchen knive set. I'd love to get that Gerber butchering set though and keep it for just game.

Like TrapperDave, I too avoid cutting through bone.

I use my 4" folding Buck Hunter for all deboning. I then use a very sharp filet knife for the rest including getting the fat and membranes off the muscles.

Ask your local butcher where you can buy Forschner knives. They are only $15 each and all butchers use them. I have the skinner, fillet and boning knives. They take a lethal edge quick and are the best for your meat cutting bag.
